蘇澳特産羊羹製做，早期以冷泉水加入石花菜及砂糖煮熟，再加入麥芽糖調和，最後加入豆沙濃縮而成，後來改良將羊羹調製為更符合臺灣人口感。

冷泉水質密度重，因此冷泉羊羹比一般羊羹更富彈牙性，質地細滑，是蘇澳最著名的觀光名産。

喝著熱茶配一小塊羊羹，是生活的一大享受。
